Effort to Reduce Obesity and Fatty Liver Using Saga’s Local Specialty, Sicilian Rice, in Palau

In Saga Prefecture, the rise in liver cancer caused by obesity and lifestyle-related diseases such as diabetes has led the Liver Center at Saga University Hospital to launch awareness campaigns in partnership with local government and medical institutions. Since 2022, in conjunction with World Hepatitis Day (designated by WHO on July 28 each year), the center has collaborated with restaurants in Saga City to provide liver-friendly lunch menus. One of the key offerings is a healthy yet satisfying version of Sicilian Rice, a popular local dish, co-created by restaurant chefs and the Liver Center to be both delicious and low in calories.

Purpose of the Initiative
The main objective of this initiative is to raise awareness in Palau—where obesity rates are extremely high—about what constitutes a healthy, balanced diet. By offering a menu adapted to Palauan food culture, we aim to promote healthier eating habits and help reduce the risk of lifestyle-related diseases.

Expected Outcomes
Through our collaboration with local restaurants in Palau, we expect to establish a sustainable model for healthy eating that can take root within the community. This initiative also holds promise for contributing to obesity reduction in Palau, while increasing awareness of Saga’s food culture and its health benefits. In doing so, we aim to enhance cultural exchange and mutual understanding between Japan and Palau.
